This recipe leans heavily on the beautiful, aromatic blend of Herbes de Provence (a mix of thyme, rosemary, savory, marjoram, and often a touch of lavender). The flavors feel like you at a fancy restaurant.
This easy dish tastes like it took hours to make, perfect for a weeknight when you want a quick but gourmet meal.

Ingredients:
3 boneless pork chops
Olive oil
Herb de Provence seasoning (such as Trader Joe's brand)
Salt
Pepper
Garlic powder
Squeeze of fresh lemon
Avocado oil, for cooking
Instructions:
Season the Pork Chops: In a shallow dish, lightly coat the pork chops with olive oil. Generously season both sides of the pork chops with salt, pepper, garlic powder, and the Herb de Provence seasoning. Finish with a small squeeze of fresh lemon juice.
Marinate: Allow the pork chops to season for at least 2 hours. This is perfect for seasoning before going out to work or running an errand.
Prepare the Pan: Heat a grill cast iron pan over medium-high heat. Once hot, coat the pan lightly with avocado oil.
Grill: Place the seasoned pork chops on the hot grill pan. Cook for about 10 minutes to develop nice grill marks.
Flip and Finish: Flip the pork chops and cook for another 7 minutes. Use a meat thermometer to ensure the pork is fully cooked to an internal temperature of 145∘F.
Serve: Rest for a few minutes before serving.
