Grilled Peach & Burrata Salad

Ingredients:
Romaine lettuce
Cucumber
Burrata cheese (or mozzarella if preferred)
Fresh peaches (firm ones work best)
Olive oil
Balsamic vinegar or vinaigrette
Salt & pepper, to taste
Perfect for a hot summer evening when you want something refreshing and quick. When it's sweltering outside, the last thing you want to do is turn on the stove.
Instructions:
Prep the Grill:
Preheat your grill to medium heat (about 400°F). If using a stove put that on medium heat for about 3-5 minutes.
Prepare the Peaches:
Slice the peaches in half and remove the pits. Brush each side with olive oil and season lightly with salt and pepper.
Grill:
Place peaches on the grill and cook for about 5 minutes, or until you see clear grill marks. Remove from the grill and let them cool slightly. (Tip: Use firm peaches so they don't turn mushy.)
Assemble the Salad:
Start by layering a platter with chopped romaine lettuce.
Slice the cucumber lengthwise, then cut into halves or quarters and scatter over the lettuce.
Slice the grilled peaches so the grill marks are visible and arrange them alongside the cucumbers.
Tear or cut the burrata into quarters (it may get a bit messy—and that’s totally fine!) and place it around the salad.
Drizzle with your favorite olive oil and a splash of balsamic vinegar or vinaigrette.
Finish with a pinch of salt and freshly cracked black pepper.
Serving Suggestions:
This salad pairs beautifully with grilled chicken, turkey, or shrimp.
Enjoy it with a crisp glass of rosé for the ultimate summer vibe.
