Grilled Peach & Burrata Salad

Ingredients:

  • Romaine lettuce

  • Cucumber

  • Burrata cheese (or mozzarella if preferred)

  • Fresh peaches (firm ones work best)

  • Olive oil

  • Balsamic vinegar or vinaigrette

  • Salt & pepper, to taste

Perfect for a hot summer evening when you want something refreshing and quick. When it's sweltering outside, the last thing you want to do is turn on the stove.


Instructions:

  1. Prep the Grill:


    Preheat your grill to medium heat (about 400°F). If using a stove put that on medium heat for about 3-5 minutes.

  2. Prepare the Peaches:


    Slice the peaches in half and remove the pits. Brush each side with olive oil and season lightly with salt and pepper.

  3. Grill:


    Place peaches on the grill and cook for about 5 minutes, or until you see clear grill marks. Remove from the grill and let them cool slightly. (Tip: Use firm peaches so they don't turn mushy.)

  4. Assemble the Salad:

    • Start by layering a platter with chopped romaine lettuce.

    • Slice the cucumber lengthwise, then cut into halves or quarters and scatter over the lettuce.

    • Slice the grilled peaches so the grill marks are visible and arrange them alongside the cucumbers.

    • Tear or cut the burrata into quarters (it may get a bit messy—and that’s totally fine!) and place it around the salad.

    • Drizzle with your favorite olive oil and a splash of balsamic vinegar or vinaigrette.

    • Finish with a pinch of salt and freshly cracked black pepper.


Serving Suggestions:

This salad pairs beautifully with grilled chicken, turkey, or shrimp.

Enjoy it with a crisp glass of rosé for the ultimate summer vibe.
