I love to cook, Jasmine on the other hand loves to bake—especially when the weather cools down and all you want to do is stay inside. One afternoon, we were curled up on the couch under a blanket when Jasmine suddenly said, “Mom, I want to bake biscotti. Do we have all the ingredients?”I checked the pantry, and we sure did. Here’s how we make it.
Ingredients
* 1 cup sugar
* ½ cup vegetable oil
* 3 eggs
* 1 tablespoon vanilla extract
* 1 tablespoon baking powder
* 3¼ cups flour
Optional (Jasmine’s favorites):
* Caramel bits
* Chocolate chips
* Nuts or dried fruit

In a bowl, mix the sugar, oil, and eggs until well blended.
Add the vanilla, flour, and baking powder. Mix until a dough forms.
Fold in any extras you like—this is the fun, creative part.
Let the dough rest for 30 minutes.
Preheat the oven to 350°F.
Shape the dough into a log and bake for 30 minutes.
Remove from the oven and let cool slightly.
Slice the log into 12 pieces and return to the oven for 12- 15 minutes.

Remove and let cool completely.
Jasmine drizzle hers with melted chocolate.

Enjoy with your favorite coffee drink
