Miso glaze brussels sprouts

Goes with anything — or eat it all on its own!


Ingredients

  • Brussels sprouts (as much as you’d like)

  • 1–2 tbsp honey

  • 1–2 tbsp miso paste (white or yellow miso works great)

  • 1 clove garlic, minced

  • 1–2 tbsp lemon olive oil (or regular olive oil with a squeeze of lemon)

  • Black pepper, to taste

  • A drizzle (about ½ tsp) of hot water, if needed...Totally up to you


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Prep the sprouts:

    • Wash and cut Brussels sprouts in half.

    • Keep any loose leaves — they’ll crisp up like chips in the oven!

  3. Roast:

  4. Spread sprouts on a baking sheet and drizzle lightly with olive oil.

  5. Roast for 20 minutes, until they start to brown and crisp.

  6. Make the glaze:

  7. In a small bowl, mix together miso paste, honey, minced garlic, lemon olive oil, and black pepper.

  8. If it’s too thick, add about ½ tsp of hot water to loosen it slightly (just enough to drizzle — not watery).

  9. Glaze and finish baking:

  10. Remove sprouts from the oven, drizzle the miso mixture evenly over them, and toss lightly.

  11. Return to oven and bake for 10–15 more minutes, until caramelized and golden.

  12. Serve:

  13. Transfer to a bowl and enjoy!

  14. Pairs beautifully with steak, chicken, tofu, or rice bowls — or enjoy them solo as a snack.
