Miso glaze brussels sprouts

Goes with anything — or eat it all on its own!

Ingredients
Brussels sprouts (as much as you’d like)
1–2 tbsp honey
1–2 tbsp miso paste (white or yellow miso works great)
1 clove garlic, minced
1–2 tbsp lemon olive oil (or regular olive oil with a squeeze of lemon)
Black pepper, to taste
A drizzle (about ½ tsp) of hot water, if needed...Totally up to you
Instructions
Preheat oven to 400°F (200°C).
Prep the sprouts:
Wash and cut Brussels sprouts in half.
Keep any loose leaves — they’ll crisp up like chips in the oven!
Roast:
Spread sprouts on a baking sheet and drizzle lightly with olive oil.
Roast for 20 minutes, until they start to brown and crisp.
Make the glaze:
In a small bowl, mix together miso paste, honey, minced garlic, lemon olive oil, and black pepper.
If it’s too thick, add about ½ tsp of hot water to loosen it slightly (just enough to drizzle — not watery).
Glaze and finish baking:
Remove sprouts from the oven, drizzle the miso mixture evenly over them, and toss lightly.
Return to oven and bake for 10–15 more minutes, until caramelized and golden.
Serve:
Transfer to a bowl and enjoy!
Pairs beautifully with steak, chicken, tofu, or rice bowls — or enjoy them solo as a snack.
